Francis' Large Lima Bean Recipe

If you like chili, you'll love Francis' Large Lima Bean Recipe!  We are a major distributor of lima beans and this recipe will make you a hit with your family!

Today's Date -- 7/7/2006 ...

3.5 lbs dry large lima (about 7 cups)
3 – 4 Medium Yellow Onions
3/4ths lb of Chorizo 
4 cloves garlic
2-28 ounce cans of crushed tomatoes
11 ounces of canned green chilies
2 ham hocks

1.Cook chorizo until dark brown and spoon out grease.
2.Rinse beans DO NOT soak – set aside
3.Add onions and garlic – simmer until tender
4.Add tomatoes, chilies and ham hocks.
5.Add about 12 cups of water
6.Bring to a boil – slowly boil for about 45 minutes with lid cracked
7.Add beans and stir occasionally with the lid cracked.
8.Make sure to keep adding water just above the level of the beans as they will take on 1.5 times their original weight and size.
9.Slowly boil for about 2.5 to 3 hours (until beans are tender).
10.Salt and pepper to taste (requires very little)
11.Recommend serving with sourdough bread
12.Enjoy and write us a thank you note!

If you leave the lid cracked to allow the beans to breath when they are “sitting”, they have less chance of fermenting and spoiling.
